Vietnamese Pizza (bánh tráng nướng)

In Vietnam this is called bánh tráng nướng is essentially grilled rice paper used as the pizza base. All you need is rice paper, egg, green onions, your choice of toppings and a pan to put everything together over a stove top. That's right, no OVEN! Easy, delicious with ingredients that you already have in your fridge.

This is one of my favorite go-to snacks. Crispy rice paper pizza topped with egg, spring onion, and your choice of veggies and protein, what’s not to like?

Rice paper - I use the Bamboo Three brand to make pizza as the rice paper for this brand is more crispy than others when grilling. The whatever pan I am using is the perfect fit for the 25 CM size of rice paper.

Egg mixture/binding agent

1 egg

green onion - add as little or as much as you like. This is your pizza. I use 1 tbsp.

1 tbsp Gochujang - Korean chili paste. This is spicy. Sub with tomato paste for non-spicy

Mix the egg, green onion and chili paste and this will serve as the egg mixture/binding agent for your pizza.

Toppings

Ham or other cooked meat you have. Left over chicken would be delicious. Hot Dogs, sausage, turkey, Salami, Pepperoni, etc. If nothing in the fridge, what can goods do you have in the pantry? Tuna will work, Olives is perfect as well. My favorite has to be Chinese sausage or shredded pork.

Pineapple

Red bell peppers; Sub for tomatoes or any other veggies that you have

The amount of toppings is up to you.

I add arugula and Vietnamese herbs after the Pizza is done cooking for freshness

Finished with ribbons of mayonnaise and sriracha
