Wonton Noodle Soup (Mì Hoành Thánh)
Wonton Noodle soup ismy go to comfort soup. Homemade wontons and broth are completely worth the effort because you have control over the seasoning and quality of the ingredients. You can customize both to your taste buds. The Vietnamese Wontons are made with pork and shrimp as the filling. However you can substitute for tofu and vegetables such as chives, water chestnut or mushroom if you want to keep the fillings vegan.
Wonton
1 package round shape Twin Marquis dumpling wrapper
1 lb ground pork
1 lb shrimp (~1/2 after cleaned peeled and devein)
1 chopped shallot
2 chopped garlic
1 tsp sugar, 1 tbsp salt, 1/2 tsp pepper
1 tbsp oyster sauce
1/2 tbsp sesame oil and 1/2 tbsp of chili oil
t tbsp corn starch
1 egg
1/4 cup Shaoxing wine
1/2 tbsp ginger powder
Bone Broth
2 ~ 3 lbs pork bones
1 medium sweet onion
2 tbsp salt (use to blanch the bones)
1 tbsp white vinegar (use to blanch the bones)
15 cups water
1 rock sugar
1 tbsp peppercorns crushed
2 carrots
1 daikon
1 small ginger crushed
1 roasted dried squid
salt and pepper to taste
2-3 tbsp of fish sauce
Toppings
Fried Tofu, sliced
Garlic or Chinese Chives
Bean Sprouts
Egg Noodles - can be purchased at asian supermarket; follow package instructions to cook
Spring onions, chopped
Cilantro, chopped
