Vegan Spring/Summer Rolls

This rice paper roll is perfect for all the vegetarians. Even my son, the meat eater loves this recipe. My daughter, Franchine loves tasty Asian dishes but she loves her animals more and have requested this recipe.

Dipping Sauce:

Saute one chopped shallots and 1 tbsp of sliced ginger until softened and add the following ingredients in the pan:

1 tbsp of hoisin sauce

1 Korean chili paste (Gochujang)

1 tbsp of sesame paste

1 tbsp of honey

Whisk until sauce is boil and well mixed

Tofu

In a frying pan, heat oil over medium heat add sliced one tbsp of ginger and one small shallot stir until softened. Add the sliced tofu and toss 5 minutes. Add the marinated sauce: 1 tbsp of soy sauce, tbsp of sesame paste, 1 tbsp of honey drizzle of sesame sea oil and water, mix well. If you would like a thicker sauce add some cornstarch to the sauce and mix well. Be creative with the sauce. Adjust the recipe to your liking. If you like some tanginess add some lime juice to the sauce. Want more sweet, add extra sugar. The 1:1 ratio on the sauce ingredients is the base of the sauce. Feel free to add and subtract where you see fit. You cant go wrong with saucing the tofu, as long as you add something salty, something sweet and some spices you are good to go!

Rest of the filings:

Stir fry carrots -  julienne carrots and stir fry for 2 minutes or until softened. Season lightly with pinch of salt and pepper.

Sliced fresh mango - medium ripe or raw

Fresh bamboo shoots or sprouts - you can get this at the Asian Market - stir fry for 2 minutes and season with salt and pepper
