Bún riêu
Bun Rieu is not a dish that my mom would make often. I learned how to make this dish from my aunt in law, Co Nhi. Co Nhi would make this dish often whenever we visited her home in Fort Worth. Like my mom, Co Nhi does not measure when cooking. Below are the ingredients that Co Nhi used for her Bun Rieu:
Soup
1 ~ 2 lbs. of tomatoes, sliced in 4 (any type)
2 tbsp of corn oil
1 tbsp sugar
2 tbsp salt
4 large can of chicken broth; I would normally use 10-15 cups of my homemade pork bone stock
1 lb. of crab meat; use good quality crab meat from Central Market or Costco
1 can of bun rieu seasoning - Auntie used LEE Minced Crab In Spices brand
1 tbsp fish sauce
2 tbsp chicken bouillon
1 tbsp of Tamarind soup mix
Rieu
1/2 lb dried shrimp, rinse and cook in low heat to soften
1 lb of fresh shrimp, with heads on. Clean and marinated with 1 tbsp of sugar
1 tbsp of fermented shrimp paste (Mam Tom)
3 eggs
Noodle
1 package of bamboo tree rice noodle
Sides
fried shallots
green onions
cilantro
chili, mined
lime, sliced
Vietnamese herbs
bean sprouts
cooked pork sausage (cha lua)
Bun Rieu is Auntie Nhi Ninh signature dish. This recipe is easy to make and can be modified with ingredients that you have at home.
