Surf & Turf Rice Paper Rolls

My family loves a Surf and Turf dinner. To make the dish healthier and serve 4 people with one steak,
roll pieces up in rice paper along with all the toppings. Enjoy!

Ingredients:

 Steak & Shrimp

  • 2 Ribeye Steak – Filet Mignon is also good

  • Salt and Pepper – I used the pre-made salt and pepper that our family made.  Roasted pepper then grind finely, mixed with roasted salt.  Roasting the pepper and salt gave smokiness to the flavor.   The amount.  I used generous amount to coat the steak just right before cooking.

  • Oil – use a roasted sesame oi

  • 1 lb Shrimp – use large 21-25 count shrimp – in addition to the salt and pepper, sesame oil, I added 1 tbsp. of fish sauce

Dipping sauce

  • ¼ cup chopped cilantro and chopped scallion

  • 2 chopped garlic cloves

  • 3 chilies

  •  3 tbsp sugar

  • 3 tbsp fish salt

  • 3 tbsp vinegar

  • 4 tbsp water - this is optional if you want the taste to be a bit lighter side

  • 1 tbsp lime juice - if you want the sauce more sour

Rice paper roll toppings:

  • Fine rice noodle

  • 1 English Cucumber, julienne

  • Boston leaves - the leaves are lighter and I am told that they have more nutrients so why not! 

  • Vietnamese herbs

  • Rice paper – I used 22 cm in size Three Ladies brand; however with the constant supply chain issues I cant find this brand at the store anymore so use any rice paper that you can get your hands on !
