Crispy Fried Shrimp - Rice Paper Rolls

I’ve always have craving for fried food and especially crispy fried shrimp rolls. I can eat tons of them just like a kid eating french fries. I wan to re-create them and make it healthier. Here I am wrapping the fried shrimp with arugula, cabbage, pickled carrots, daikon, cucumber, and herbs and turn them into a fresh rice paper roll. This meal definitely brought back memories. Ingredients:

  • 1 lb large shrimp, peeled & deveined 

  • 1 package TYJ spring roll pastry thin mini wrapper  (Spring Home Brand)

  • 2 cup vegetable oil

Coconut Dipping Sauce

  • one can of the mini (5.6 oz) coconut milk (use 1/2 can if you want less creamier sauce)

  • 1/4 cup of diluted fish sauce or base fish sauce

  • 1 tbsp peanut butter

  • 2 garlic cloves

  • 1 chili

  • 1 tbsp fresh lime juice

  • optional - garnish with sriracha for extra spicy
