Vietnamese Dipping Sauces

Vietnamese dipping sauces for spring rolls, summer rolls and egg rolls. The sauces can also be used for dipping sauces or salad dressing or as a marinade.

Peanut hoisin sauce:

Heat the saucepan over medium heat, add one chopped garlic and 1/4 of shallots with oil in a pan.  Stir until soften. Add the rest of the ingredients and stir until the sauce come to a boil.

1 tbsp. hoisin sauce

1 tbsp. peanut butter

1 tbsp. of coco coconut soda. If you dont have this use water. The coconut soda makes the sauce a bit sweeter . This is the base of the peanut sauce. Adjust the base of the sauce to your taste. Add the toppings that you like.

Traditional toppings - crushed peanuts and chili

Optional – add mint pesto to the peanut hoisin sauce for extra flavor  see- Bo Bia recipe

Fish sauce base:

Equal parts of sugar, vinegar, water and fish sauce. taste and adjust if need to. In a large bowl add sugar and vinegar, stir until the sugar is dissolve then add water and fish sauce.  Mix well and pour the sauce into a clean jar. This is the base of the fish sauce. Add to the base of the fish sauce depending the type of rolls/wrappers or salad

Fish sauce (Nuoc cham) for fried egg rolls:

2 tbsp. of the base fish sauce

add chopped garlic and chili add lime juice for freshness to the sauce

optional: if you want a sweeter sauce add lemonade or the coconut soda to the fish sauce. if you would like the sauce to be thicker, add corn starch or rice flour

Lemongrass fish sauce - can be used as dipping sauce or marinade: 2 tbsp. of base fish sauce 1 tbsp. crushed lemongrass 1 crushed garlic chili.

Ginger fish sauce - can be used as dipping sauce or marinade:

2 tbsp. base fish sauce

 tbsp. crushed ginger

1 crushed garlic & chili

This ginger fish sauce pairs well with poach chicken spring roll/summer roll

Basil/Mint pesto fish sauce - can be used as salad dressing or dipping sauce:

2 tbsp. base fish sauce

1 tbsp. pesto paste

1 tbsp. olive oil

 chili
