Grilled Jackfruit with Vermicelli

I love jackfruit, as tropical fruit and in my deserts. Recently I am seeing fresh jackfruits in most of the non-asian grocery store and even at Costco. I am also seeing more pulled pork recipe as meat alternatives for vegans and for anyone looking for a healthier lifestyle. This inspired me to make a savory jackfruit using Vietnamese seasonings. If you had Bun Thit Nuong you may be familiar with the seasoning of this dish. Grilled Jackfruit Vermicelli bowl is absolutely delicious. Together with Vermicelli noodles , crunchy veggies, fresh herbs and peanuts is a healthy and light dish bursting with freshness and great flavor.

Grilled Jackfruit

  • 3 lbs fresh unripe jackfruits; use can jackfruits if fresh is not available. Make sure that the can said Young or Green Jack fruit

  • 1 tbsp fish sauce

  • 2 tbsp soy sauce

  • 2 cloves garlic

  • 1 tbsp shallots

  • 2 tbsp chopped lemongrass 

  • 1 tbsp sesame oil

  • 1/2 tbsp of honey or sugar

  • 1 tbsp of green onion

  • 1/4 cup shaoxing wine

Noodles

Vegetables and Garnishes

Soy Sauce - dipping sauce

  • 2 tbsp water

  • 2 tbsp sugar or honey

  • 2 tbsp fish sauce

  • 2-3 tbsp freshly squeezed lime juice 

  • 2 garlic cloves

  • 1 tbsp of ginger

  • 1 fresh chili

  • few Vietnamese herbs

Instructions

Grilled Jackfruit

  • Combine and blend all ingredients listed under "Grilled Jackfruit", except for the Jackfruit and the rice wine in food processor/blender to create marinate sauce. Pour the marinate sauce over the jackfruits, mix and make sure that the jackfruits are coated with marinate.

  • Grill jackfruit on a grill pan or cook in cast iron skillet. Pour the marinated Jackfruits to a pan or cast iron skillet and mix. Add 1/4 cup of shaoxing wine, rice wine and 1/4 cup of water. Cover the lid and let the jackfruits simmer for 15 minutes. Remove the lid and stir. Remove from the stove stop and transfer the jackfruits to the preheat oven at 400 degree. Bake for 30 minutes until jackfruit is golden brown. If you prefer for the savory jackfruits to be soften, bake for 15 minutes (textures will be similar to the pulled pork). Bake for 30 minutes for a dryer crispy taste (texture is more like grilled pork)

    Noodles

  • Cook noodles base on package insutrctions. It's usually cooks quickly! If noodles needs to sit for a while before combining with the other ingredients, rinse them in cold water to prevent them from sticking to each other, continuing to cook and turning mushy.

    Combine

  • Assemble the noodles to bowl, lettuce at the bottom, sprouts, cucumber, noodle, and top with grilled jackfruits, garnish with chopped peanuts and eat!
