Cháo gà - Chicken Porridge

This is one of my all-time favorite comfort food dishes and I am so grateful that I got to cook this dish with my Mom. Mom loves to tell stories as we cook so be sure to click on the link below to watch her tell the epic love story of the hen and the rooster! The challenging part is mom has never measured the amount of seasoning for any of her recipes. I have adjusted this recipe after watching her prepare Cháo gà many times.

Chao/porridge

  • 1 whole chicken

  • 10 cups of water

  • 1/2 onion

  • 3 slices of ginger

  • 1 cup broken rice

  • 1/4 cup glutinous rice

  • 2 tbsp. fish sauce

  • 1 tbsp. salt

  • 1 tbsp. sugar or one small rock sugar

  • green onion, pepper and fried shallots to garnish

Goi ga/chicken salad:

  • 1/2 cabbage, shredded

  • 1/2 onion, thinly sliced

  • 1 tbsp. sugar

  • 1-2 lime juice

  • 1 tbsp. fish sauce

  • Vietnamese coriander and Thai basil to garnish
